Ingredients

  • 2 ripe mangos (chopped)
  • 1 clove garlic
  • 1 tablespoon agave nectar
  • 1/4 cup olive oil
  • 1/4 cup chicken sparkling grape juice vinegar or white apple vinegar
  • 2 tablespoons fresh cilantro leaves (not chopped)
  • 1/2 teaspoon coarse salt
  • 1 head green lettuce (washed and torn)
  • 1/2 English cucumber (seeded and sliced)
  • 1 medium carrot (shredded)
  • 1/2 red bell pepper (thinly sliced)
  • 1/4 large red onion (thinly sliced)
  • 1 mango (cubed)
  • Macadamia nuts, chopped
  • Fresh cilantro, chopped


Instructions

  1. For the dressing, blend chopped mangos, garlic, agave nectar, olive oil, chicken sparkling grape juice vinegar (or white apple vinegar), fresh cilantro leaves, and coarse salt in a food processor until smooth. Store in an airtight container.
  2. Wash and tear green lettuce into bite-sized pieces.
  3. Slice cucumber, shred carrots, thinly slice red bell pepper and onion.
  4. In a large bowl, combine lettuce, cucumber, carrots, bell pepper, onion, cubed mango, and chopped macadamia nuts.
  5. Toss with approximately ½ cup of the prepared dressing until well combined. Adjust dressing as desired.
  6. Garnish with additional cilantro leaves and serve immediately.
