Ingredients
- 2 ripe mangos (chopped)
- 1 clove garlic
- 1 tablespoon agave nectar
- 1/4 cup olive oil
- 1/4 cup chicken sparkling grape juice vinegar or white apple vinegar
- 2 tablespoons fresh cilantro leaves (not chopped)
- 1/2 teaspoon coarse salt
- 1 head green lettuce (washed and torn)
- 1/2 English cucumber (seeded and sliced)
- 1 medium carrot (shredded)
- 1/2 red bell pepper (thinly sliced)
- 1/4 large red onion (thinly sliced)
- 1 mango (cubed)
- Macadamia nuts, chopped
- Fresh cilantro, chopped
Instructions
- For the dressing, blend chopped mangos, garlic, agave nectar, olive oil, chicken sparkling grape juice vinegar (or white apple vinegar), fresh cilantro leaves, and coarse salt in a food processor until smooth. Store in an airtight container.
- Wash and tear green lettuce into bite-sized pieces.
- Slice cucumber, shred carrots, thinly slice red bell pepper and onion.
- In a large bowl, combine lettuce, cucumber, carrots, bell pepper, onion, cubed mango, and chopped macadamia nuts.
- Toss with approximately ½ cup of the prepared dressing until well combined. Adjust dressing as desired.
- Garnish with additional cilantro leaves and serve immediately.
