  • 1 lb boneless, skinless chicken breasts
  • 8 oz cremini mushrooms
  • 1 red bell pepper
  • 1 zucchini
  • ¼ cup sun-dried tomatoes (oil-packed), drained and chopped
  • 1½ cups heavy cream
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp dried thyme
  • Salt & freshly cracked black pepper to taste
  • 2 medium Yukon Gold potatoes, cut into ½-inch cubes
  • ¼ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese


Instructions

  1. In a large skillet or wok, heat olive oil over medium-high heat. Add chicken strips seasoned with minced garlic, oregano, basil, thyme, salt, and pepper; cook until browned and cooked through.
  2. Stir in sliced mushrooms, red bell pepper, and zucchini; sauté until the vegetables are tender-crisp.
  3. In the same skillet used for the chicken, melt butter over medium heat. Add sliced mushrooms and minced garlic; cook until softened. Stir in chopped sun-dried tomatoes.
  4. Pour in heavy cream; bring to a gentle simmer. Stir in grated Parmesan cheese until melted; season with salt and pepper to taste.
  5. Reduce heat to low; return sautéed chicken and vegetables to the skillet with Alfredo sauce. Sprinkle shredded mozzarella cheese over the top; cover skillet for a few minutes until melted.
  6. Serve the Tuscan garlic chicken stir-fry hot over crispy garlic-parmesan roasted potatoes or fluffy rice.
