  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder

  • 1 teaspoon salt
  • 3/4 cup cold butter, cut into cubes
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
  • 4 ounces semi-sweet baking chocolate, chopped
  • 1 1/8 cups semi-sweet chocolate chips, divided
  • 3/4 cup coarsely chopped walnuts
  • sea salt, optional


Instructions

  1. Preheat the oven to 400°F and line two cookie sheets with parchment paper.
  2. In a medium bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt; set aside.
  3. In a stand mixer or using a hand mixer, cream the cold butter with light brown sugar and granulated sugar until creamy. Mix in the egg and vanilla extract.
  4. Gradually add in the dry ingredients along with the chopped chocolate and one cup of chocolate chips; mix until just combined.
  5. Use a large cookie scoop to portion out dough onto prepared sheets. Gently press remaining chocolate chips on top.
  6. Bake for 12 to 13 minutes until edges are golden brown. Let cool on the sheet for five minutes before transferring to a wire rack.
