Ingredients

  • 1 ½ cups almond flour
  • ¼ cup oat flour
  • 1/3 cup melted refined coconut oil
  • ¼ cup pure maple syrup
  • 1 cup fresh or frozen mixed berries
  • 1 tbsp water
  • ½ tsp cornstarch
  • ½ cup oat flour
  • ¼ cup oats
  • 2 tbsp almond flour
  • 1 tbsp pure maple syrup
  • ½ tsp vanilla extract
  • pinch of salt


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, oat flour, salt, melted coconut oil, and maple syrup. Press into the bottom of an 8×8-inch baking dish.
  3. In a pot over medium heat, combine berries, maple syrup, and water. Mash the berries until softened; stir in cornstarch and simmer until thickened.
  4. Spread berry mixture over the base layer.
  5. In another bowl, mix oats, oat flour, almond flour, melted coconut oil, maple syrup, and vanilla extract until crumbly; sprinkle over berry layer.
  6. Bake for about 25 minutes or until golden brown. Allow to cool completely before slicing into squares.
