- 1 ½ cups almond flour
- ¼ cup oat flour
- 1/3 cup melted refined coconut oil
- ¼ cup pure maple syrup
- 1 cup fresh or frozen mixed berries
- 1 tbsp water
- ½ tsp cornstarch
- ½ cup oat flour
- ¼ cup oats
- 2 tbsp almond flour
- 1 tbsp pure maple syrup
- ½ tsp vanilla extract
- pinch of salt
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, oat flour, salt, melted coconut oil, and maple syrup. Press into the bottom of an 8×8-inch baking dish.
- In a pot over medium heat, combine berries, maple syrup, and water. Mash the berries until softened; stir in cornstarch and simmer until thickened.
- Spread berry mixture over the base layer.
- In another bowl, mix oats, oat flour, almond flour, melted coconut oil, maple syrup, and vanilla extract until crumbly; sprinkle over berry layer.
- Bake for about 25 minutes or until golden brown. Allow to cool completely before slicing into squares.
